I’m back again

It’s been a while, hasn’t it? I’ll spare the apologies and just get right to today’s wrap-up.

Goji berry and avocado muesli:

Chickpea cutlet, flat round bread, carrots (No, I didn’t eat the whole bag!) and cantaloupe:

No outstanding photography today, I’m afraid! I’ve been running late and forgetting things like crazy lately, so bear with me :mrgreen:

This evening I went for another run/walk with a friend. It wasn’t super hard but it got us moving and chatting :D Now I’m going to bed – I’m exhausted after a 11+ hour work day

PS – My mom loved her cupcakes!

Well, today was a bit shorter than yesterday. It rained off and on all day so I was able to leave work a bit early. It’s too bad that I didn’t use the extra time to do much other than clean, but it was a nice feeling to get home before I was exhausted for a change. My next goal will have to be getting back into my training – other than a social, easy “run” on Tuesday, I have not done any exercise other than walking in at least 2 weeks :oops:

Since it was so cold and rainy this morning, I decided to go for some banana oatmeal (half a banana, some oats and milk)

I actually only took the photo after I got full, so what you see here is what I put back in the fridge to eat later. I know, it looks really ugly… I swear that it was good though!

Here’s my lunch, all packed in my lunch box:

You can see an apple, water, green pepper strips (which I never did eat and will make a repeat showing tomorrow) and my wrap that’s wrapped in tinfoil. On the wrap was some rice, some roast beef and some cheese. The plan was to have veggies on the side, but I guess I just didn’t feel like it!

After work, I ate the rest of my oats and some cantaloupe

And leftovers for supper. I did a quick veggie stir-fry with green pepper, zucchini and tomato and put that in a tortilla along with the chicken stir-fry leftovers from Tuesday night.

Just for interest, here’s what I made my mom with the same leftovers (plus some more):

Brown rice, the same veggie stir-fry that I ate on my wrap and some roast beef.

After my mom left, I started my secret Mother’s Day project: cupcakes! Of course I ate one of these yummy treats :mrgreen:

I made chocolate – chocolate chip – banana cupcakes with chocolate ganash (is that how you spell that?) and, of course, sprinkles! Of course I then proceeded to pop one (okay, two) into my mouth :mrgreen:

Next, I prepped tomorrow’s breakfast – blueberry muesli and put that in the fridge.

Finally, I packed my lunch for tomorrow: the same as today, photographed without foil this time :D

Roast beef ans cheese, since you can’t really tell from the photo. There’s also an apple, green pepper and cucumber slices, but they don’t make such an interesting photo :P

I’ll leave you with an observation I’ve made since moving home: I eat way more meat when I’m not paying for it myself! My diet almost seems vegetarian when I’m on my own, but I do love meat too much to pass it up when it’s right there for me. I’m not sure why I thought this was important to point out, it was just something I’ve noticed.


Tired

Wow, I just got home about 5 minutes ago and it’s 11:30 pm now. I am so tired! I wasn’t at work all this time, but I had stuff to do after work and one thing just led to another… Supper was a veggie stir-fry over rice, not made by me (as usual lately!) and then I was out of the house as fast as I could eat. Sorry again for the lack of photos! I’ll get into a schedule one of these days :lol:


Another long day

Well, I’ve realized that I’m going to be working much longer hours than I had thought! I managed to leave on time today, but only because I had an appointment to get to – tomorrow I could be there until dark! I’m starting to worry about my biking time now. At least my wallet will be happy I guess because I need to keep this job for the summer (it’s tied into school as a placement)

Tonight’s supper was a chicken stir-fry with veggies (I was too hungry to even see what ones my mom put in!) all wrapped up in a whole wheat tortilla.

It was delicious! I believe my mom made a variation of the recipe Bohemian Wrapsody from Crazy Plates.

I snacked on some strawberries too while I was waiting, but they kept getting popped into my mouth too fast for a photo-op :mrgreen:

While I’m at it, I’ll do a preview of tomorrow since I have to be at work early tomorrow morning. I’m having muesli with some frozen berries (thawed) and avocado if I remember it in the morning. Here it is in my hand, on the way to my fridge:

Later I’ll have a ham and veggie wrap with some carrots and an apple.

Hope you have a good night and I’ll try to make it back for supper tomorrow. I might have to eat on the job though, which means no photos again. I don’t want to break my camera or lose it.


Surprise!

It’s muesli again! This time, my muesli was loaded (well, by my standards it was… ) This morning I used my usual combo of oats and plain yogurt, along with a few goji berries, some thawed berries and some peanuts.

Ya know what? I didn’t like the peanuts or the blackberries – too much crunch in my otherwise creamy muesli! It was still good, just not amazing.

Here’s my lunch for today:

It’s almost the same as yesterday except that there’s an apple, there are no more pickles and I just packed my veggies on my sandwich this time. I may be eating a soggy ham sandwich, but I hope not :P
