That’s me! My eyes are bigger than my stomach, I mean.

For supper tonight, I made Scentilentil Journey from the Looneyspoons cookbook with Happy Herbivore’s Saag. I should say that I didn’t make it exactly as in the recipe and I didn’t puree the greens (didn’t want extra dishes to wash!) I am stuffed and there’s still about 3/4 of the rice left over, so I stuck it in the fridge for later. I know it’s really not photogenic, but this meal was so good. Here’s a close-up showing the mountain of rice:
I’m back! As promised, I ate the rest of my rice tonight. I made a microwave “rice pudding” by adding some milk, raisins sugar, cinnamon and vanilla to my rice, then nuking it on low for about 10 minutes. This was the perfect little sweet treat – healthy too because of the brown rice and very small amount of added sugar.
