Busy Day Ahead!

Today is my last long day at school :mrgreen: First up is my fluid mechanics final exam at 8:30, then a short break followed by my computer science exam at 12:30. This is the second CS exam, I wrote the paper one on Monday and today’s exam is actually on a computer. I’m a bit nervous because it will be graded electronically, which means that one little typo will lose me a lot of points since no one actually reads the programs we write. Did that last sentence even make sense? If not, let’s just say that I’m a bit nervous! After that exam, I have a 30 minute break before I have to meet my partner to discuss our assignment that’s due in another 30 minutes. Hopefully she’s got it all figured out because I don’t even remember how I did my half anymore :oops: After all of that I have a PJ party with a kids group I volunteer with. I have to admit, supper may just be cake :oops: I’ll try to pack some food to take with me, but that’s getting a but scarce around here :mrgreen:

With this busy day in mind, I’m spreading my meals into mini meals today. Each meal isn’t really complete in the sense of having all the food groups but I will try to get them a in at some point throughout the day! Breakfast is the simplest of muesli’s – just oats and yogurt. I didn’t even have a piece of fruit on the side, but you can bet that I’m having some caffeine before my exam!

Snack number one is a larabar

Yes, I took that photo last night in my semi-dark room as I was packing :lol:

Snack number two, more of a meal, is leftover cauliflower curry and black rice. It would probably hold me better if there was some protein, but I don’t know what I feel like eating with this so it will be on it’s own.

Other snacks I’m bringing with me to eat as I need them are carrots, peppers and a kiwi


A busy morning!

I’m glad to report that my post spinning snack filled me up wonderfully! I ended up taking my cheese oat muffins with me and eating one while I did a quick change from bike clothes to weight room clothes. I then headed over for a super quick upper body weight session to really tire me out. As I walked home, I ate the other muffin amd I have to say that I really wasn’t hungry come lunch time!

On a side note, I definitely preferred these muffins with the oats ground into a flour better than whole! It made them much more muffin-like.

As I said, I wasn’t too hungry for lunch, so I had a light salad with spinach, yellow pepper, mushrooms and chicken. This wasn’t really my whole lunch but it was all I wanted at the time, so off I went to do some runnung around that needed to be done. As I was nearing the end of my errands I started to feel hungry and it hit me really quickly so I knew that I needed to eat right away. Luckily, I was near my fave health food store and I stopped in to get a larabar. This time I chose the cinnamon roll one – yum! When I got home, I completed my lunch with a tortilla pizza with lots of veggies.

And I believe that I was still under 500 kcal for my spread put lunch!

Thought I’d do a snack post tonight since my snack was so substantial. Some days I eat 3 meals further apart with small snacks during the day and some days I eat more like 4 meals. I guess today’s a 4 meal day! Here’s a quick photo recap:

My Kashi bar… it was good but not as chewy or nutty as expected. This guy was the peanut peanut butter flavour. Has anyone tried any of the other kinds?

Finally I decided on a bowl of oatbran cereal made with water for achange since I’ve already had at least 3 servings of milk today. I drizzled on some honey and cinnamon for a bit of flavour.S ee you for breakfast:)


Breakfast anyone? (lunch!)

Well I thought I’d change things up a bit today since I don’t have any classes to rush off to this afternoon :) I had breakfast for lunch: an omelet filled with mushrooms and cheese. I used a fat free egg substitute, wich is something I don’t normally do because I prefer to eat more naturally (of course there are also times when I treat myself to junk food :D )

The reason I used liquid eggs is that I didn’t have room to carry eggs and I was afraid they’d break on the walk home from the grocery store. Sounds a bit strange, but I always shop with a basket instead of a cart and I know that my reusable grocery bags will only hold what will fit in the basket. I know I could get more bags but I don’t have a car so this way I only buy what I can carry :mrgreen:

Going back to this morning, I had an OK spinning class. It was just OK because I was later than I like to be – I like to get there early to get set up and start my warm up before the class starts. I find it hard to get into the right mindframe when I’m late and I don’t feel properly warmed up. That said, I still worked my butt off and felt better after the class than I did going in! Here’s what I snacked on afterwards while I listened to my prof lecture about safety on construction sites:

The perfect post-workout snack: it’s my homemade “larabar” that I made last night! I have to say that these are almost as awesome as the real thing. I should mention here that I’ve only tried the cashew cookie one and this has the exact same ingredients (cashews, dates) so I would hope it would taste similar! I don’t think I’d attempt to make other flavours myself.


Pasta Overload!

OOPS, I didn’t think that through very well did I? I had a casserole made with a layer of whole wheat rotini, a layer of cheesy crabmeat (think lasagna filling) some kale, another layer of rotini smothered in a tomato cream sauce and topped with a bit of shredded cheddar. At least it was healthy, like almost all of my meals are: the cream sauce had no cream in it, just skim milk and about a tablespoon of flour to thicken it. I then threw in some canned tomatoes (drained), crushed red pepper flakes, salt and pepper. I think tomorrow night I will have to steer myself away from pasta :P

After supper I had a bit of a DIY “craving” so I decided to continue on with my newest obsession: Larabars. Yes, that’s right, I tried to make my own “Larabar” :D Here’s what I did:

  • Buy dates and nuts
  • Realize the dates have pits in them and get really sticky fingers removing said pits
  • Grind nuts in food processor (very important to do this before getting it all sticky from dates!)
  • Set aside nuts and puree dates in food processor
  • Try to combine nuts and dates un food processor
  • Realize that the mixture is much to thick to be mixed this way :oops:
  • Try a spoon
  • Finally just stick hands in bowl and mix well (not the same bowl as the food processor blade!)
  • Wrap in plastic and flatten into a nice rectangular shape
  • Cut a piece off the end and enjoy “larabar”

Yes, that’s really the procedure I followed! It was very sticky and fun, but I think I did too much finger licking during the process! I’m stuffed again.
