Yup, I’ve got ‘em! I do not like Mondays, they are long, tiring, no-fun days. There, I said it… no more complaining now. I had a quick breakfast on my way out this morning: plain yogurt topped with almond cereal and about a quarter of an avocado.

You think I forgot a picture right? Nope, but my camera decided to die this morning so I used this old pic. I’ll work on it for lunch!
I’m also planning on gettina a cafĂ© au lait once I get to school to “help me” with my morning!

I started off my day right today with an early morning swim. It was a nice, relaxing way to get in a bit of aerobic conditioning. Before I left fot the pool, I ate about half of a banana oatmeal pancake. Banana is a great addition to oatmeal pancakes and it makes it seem like such a treat
After my swim, I headed off to class, where I ate the rest of my pancake (now cold but still tasty) and some Ezekiel cereal mixed with plain yogurt and a bit of avocado. The cereal got nice and soft and I thought it brought out the almond flavour even more. I guess I’m weird, I don’t like my cereal to be too crunchy usually!

Oh.My.God. This is amazing! I made Veganomicon’s Pineapple Cashew Quinoa Stir-Fry

I found hidden somewhere in the old posts on Jenna’s blog but I’ll leave you to find it for yourselves since I know it’s copyrighted. Wow, I don’t know what to say! I made quite a few changes, no nuts, no pineapple because I didn’t have any, added black eyed beans and carrots… It didn’t matter, this was still great! The only problem? I only had enough quinoa for one serving, so now I have extra veggies in sauce that I don’t know what to serve them with! I’ll let you know tomorrow what I’ve come up with

Now I’ll backtrack a bit to my afternoon… I did some schoolwork (boring so I won’t keep going on that subject) I then decided to finish my plyo that I didn’t do this morning but I was getting pretty hungry, so I decided on a bowl of plain yogurt topped with Ezekiel almond cereal. I really like it this way, I’m surprised since my first experience wasn’t exactly mind-blowing.

Yup, it’s true. Why do I say this? I added chocolate to my cereal. Actually, I added cocoa powder and a touch of honey to about 1/3 cup of milk, then added my oats to sit overnight and soften. This morning, I stirred in plain yogurt and high fiber cereal to turn it into “muesli”. Yes, I am weird. Here’s what itlooked like before I mixed it all together:

The chocolate milk mixture was quite tasty, but it was a bit odd after I added the yogurt because the chocolate flavour was too diluted. It needed more cocoa and sugar but I didn’t really want to add more sugar to my breakfast. I don’t think I’ll try this again unless it’s with some banana oatmeal.
This morning’s plan: spinning, then class.
