After class I was going to stay at school and go to the computer lab but I decided to come home now instead of this afternoon. I packed up my lunch and supper along with a few snacks since I won’t be home again until about 9PM. Here’s what I packed:

water bottle (important, I forgot it this morning and got so thirsty!), carrot sticks, kale and leftovers.

Leftover meal #1: Pineapple bulgur stirfry. That’s right, I subbed bulgur for the missing portion of quinoa. It is still great (I tasted as I packed my lunch
) but the quinoa is better

Next up’s leftover rice and beans from a few days ago with carrots on the side.

Finally, sautéed kale. I wasn’t planning on this but when I saw it in my fridge I realized that I better do something before it goes bad! Hopefully all this food will get me through the day, I wish I had some more snack foods to bring just in case. See you tomorrow unless I have something exciting to post tonight!

I started off my day right today with an early morning swim. It was a nice, relaxing way to get in a bit of aerobic conditioning. Before I left fot the pool, I ate about half of a banana oatmeal pancake. Banana is a great addition to oatmeal pancakes and it makes it seem like such a treat
After my swim, I headed off to class, where I ate the rest of my pancake (now cold but still tasty) and some Ezekiel cereal mixed with plain yogurt and a bit of avocado. The cereal got nice and soft and I thought it brought out the almond flavour even more. I guess I’m weird, I don’t like my cereal to be too crunchy usually!

OOPS, I didn’t think that through very well did I? I had a casserole made with a layer of whole wheat rotini, a layer of cheesy crabmeat (think lasagna filling) some kale, another layer of rotini smothered in a tomato cream sauce and topped with a bit of shredded cheddar. At least it was healthy, like almost all of my meals are: the cream sauce had no cream in it, just skim milk and about a tablespoon of flour to thicken it. I then threw in some canned tomatoes (drained), crushed red pepper flakes, salt and pepper. I think tomorrow night I will have to steer myself away from pasta

After supper I had a bit of a DIY “craving” so I decided to continue on with my newest obsession: Larabars. Yes, that’s right, I tried to make my own “Larabar”
Here’s what I did:
- Buy dates and nuts
- Realize the dates have pits in them and get really sticky fingers removing said pits
- Grind nuts in food processor (very important to do this before getting it all sticky from dates!)
- Set aside nuts and puree dates in food processor
- Try to combine nuts and dates un food processor
- Realize that the mixture is much to thick to be mixed this way
- Try a spoon
- Finally just stick hands in bowl and mix well (not the same bowl as the food processor blade!)
- Wrap in plastic and flatten into a nice rectangular shape
- Cut a piece off the end and enjoy “larabar”
Yes, that’s really the procedure I followed! It was very sticky and fun, but I think I did too much finger licking during the process! I’m stuffed again.

For supper tonight I had Annie’s Organics Shells and white cheddar (or something like that, I threw out the box already). I mixed in some peas and ham for veggies and protein. YUMMY!! Way better than KD!!
Now I’m off to do some more school work
I may do some biking too, but O’m still undecided on that part.
Edited to add: I decided to try some kale chips as seen on Kath’s blog… they are interesting, but I don’t think I will make them again. I just didn’t really like the leafy green taste!

Edited (again!) to add: OK, so I saw Ice cream and I just HAD to have some… I had Ben & Jerries Peanut Butter Tracks and WAY too much of it! I am stuffed and feeling so huge now ugh!
And on to p of tha, there’s no photo!
Repeat to yourself: Tomorrow is another day, tomorrow is another day… GRRR so mad at myself! I know it’s partly my body responding to fatigue – between lack of sleep, school stress, stressfull decision-making and training, my body is crying for energy! Why did I have to give in and feed it sugar though, I know better than that!
