Today is the last day of my spinning class. It’s sad, I love spinning, but it means that school is almost over and I will soon be home! I think there are still a few pay-as-you-go sessions later in the week that I will go to if I feel like it. I have a punch pass for those with one spot left on it – I’d hate for it to go to waste!
I had a nice, easy to digest bowl of overnight muesli this morning with bananas. They really don’t make for good colours in the photo, I should use more colourful add-ins! Bananas are so nice and sweet though :mrgreen

I’m bringing my muffins I made last night for after my spinning class, although I may come straight home and eat them here! The only class I had on Tuesdays was the one I wrote the exam for yesterday, so I’ll be way less rushed after spinning and I can shower at home
So much nicer than at the gym!

In case you’re wondering, my small muffin tin was still in the pile of dirty dishes that I’m avoiding, so I had to make 2 larger muffins this time. I wish I had just washed the other tin though because little muffins make it seem like you get more (andare so cute!)

It’s funny how the mind works sometimes. I was trying to come up with a good afternoon snack, when I started to think of those infamous oatmeal pancakes. I really didn’t want to make those again though because they seem to be making a lot of appearances on the blog. So, there I was, trying to come up with a different idea while looking over my food journal when I realized that I was a bit short on calcium today. Of course, my first thought was milk, but what goes with milk in my mind? Oatmeal, which I already had today (well oatbran, but almost the same) So, my next thought was cheese, which I decided would be an interesting addition to oatmeal pancakes. Of course, then I reminded myself that I had decided against pancakes! So what did I come up with, you ask?

Muffins! I basically made oatmeal pancakes, added cheese, dropped a spoonful into each muffin cup and baked them up
Not bad for a complete spur of the moment recipe and the whole batch of four muffins was only about 300 kcal! I think next time I’d grind up the oats so they look prettier though.
