Change of plans

Well, I took pictures all day yesterday with the intention of doing a big evening post, but then I ended up going away overnight and leaving my camera at home!

I threw together a nice vegetarian pasta for lunch yesterday. I stir-fried some broccoli and mushrooms with a bit of ginger and jalapeƱos, cooked some whole wheat pasta and tied it all together with a splash of vegetable broth. To me this is a great summer pasta, nice and fresh tasting.

Later in the afternoon, I cut up a mango that was seriously calling my name from the refrigerator :mrgreen: It was juicy and delicious as usual!

This is where it all falls apart. As I said, I went away overnight at the last minute to take advantage of my last weekend before I start work tomorrow. The trip started with a trip to the local indian restaurant. This was my first experience with real Indian food (ie not cooked by me) and I have to say that I really enjoyed it! I don’t remember exactly what we got, but we started with some samosas, followed by two meat dishes (both of which I can’t remember what they were) served with some basmatti rice and naan. Oh man, this stuff is amazing… I’ve been missing out :mrgreen: I definitely want to try google-ing the restaurant to figure out what I ate so that I can try to re-create it!

This morning, I just had a quick and easy breakfast – peanut butter toast. Okay, I’ll admit it, I slept through breakfast again… this was actually my lunch. I also had a chocolate chip cookie on my way out the door :oops:

Dinner was another stir fry cooked by my boyfriend :D This included ham, green peppers, mushrooms, zucchini, broccoli, tomatoes, carrots and rice. Again, no photo – I was too hungry to go in search of batteries for my camera. I’m not a very good blogger lately, am I? All I can say is that it was super yummy multiplied by a thousand because it was cooked for me!

Tomorrow is my first day of work and I’m a bit nervous because I honestly don’t know what to expect. I am excited too though, so all is good. I will probably have a busy morning though, so I’ll just tell you my breakfast plans tonight: toast and peanut butter with a banana if my mom doesn’t get to it first… I think she packed it in her lunch though, so I may have to settle for another fruit.

Here’s my packed lunch:

A ham sandwich on a large ciabatta bun (on the bottom right), the vegetable fillings to go on the sandwich when it’s time (on the top in the bag) and some carrots. In the veggie bag are tomatoes, pickle slices, cucumber slices and lettuce. Here’s the sandwich from up close:

First daily wrap-up

I wish I could say that today was a super productive day, but I can’t. I did get some studying done and I started packing, but I also did a fair amount of procrastination. I have two more exams on Thursday but I just can’t get into study mode. I think my brain has already gone on vacation!

On to the food…

Lunch was leftovers, as usual! “Fried” brown rice with mushrooms and carrots with a side of Hoisin BBQ beans. I guess it was an Asian themed meal :)

My dinner was inspired by HappyHerbivore: cauliflower curry with black rice and a dollop of yogurt. This was a really nice change from my usual flavours! I’m not going to post a recipe because while I half followed a recipe, I also just sort of tasted and added spices as I went along. I’m not really sure that I could remember what I threw in there. It’s basically just cauliflower and spices though.

Later in the evening I had my “desert” – a rice pudding of sorts. I basically cooked some brown rice in vanilla almond milk until it was all nice and creamy. I also added some goji berries, but you can’t really see them. I guess it was really a snack, not a desert since I ate it a couple of hours after supper :lol: I had planned on it for desert though so that’s what I’m calling it!

Finally, an apple. I wanted to slice it up nicely to make it last longer (my fave way to eat apples!) but I already packed up my knives! All my veggies are already chopped up and ready for the week so I thought it would be OK to pack them… I guess I was wrong, but I’m not unpacking them!

That’s it! I have to go un-confuse myself now… somehow I got myself all mixed up in my fluid mechanics notes today :( Sigh… It’s almost over, it’s almost over, it’s almost over….. I can’t wait!


Don’t try this at home…

I woke up this morning with a huge craving for waffles, but I didn’t have any of the right ingredients for a normal waffle batter. I briefly considered going to the store to get what I would need, but the thought of getting dressed and going out before breakfast wasn’t very appealing, so instead I tied to create waffles from what I had. Bad idea. I ended up with a very yummy tasting mess in my waffle iron (I tasted one of the crumbs I managed to peel off.) I should have taken a picture, but I was too busy wondering why I thought I could make waffles from oatmeal pancakes! Here’s a hint: they stick like crazy and are too crumbly to get off the plates.

So, I set the plates in the sink to soak (luckily they are removable!) and got started on option number two: a frittata. By this time I was starving, so it’s a good thing I usually keep some chopped veggies in my fridge! Here’s the final product:

I didn’t have much patience left for presentation, so I just piled it up on my little plate. This was another case of my eyes being bigger than my stomach, about halfway through I felt full! Since I hate to waste, I popped the last two wedges back in the fridge for my snack later (I won’t post it again, you can assume I ate it!)

Rewinding a bit to last night, I was starving! I rooted around in my fridge looking for food that wasn’t already earmarked for a meal later this week and came up with an apple and some carrot sticks. There were more carrot sticks than the picture shows and I cut up the apple to sprinkle with cinnamon, but you get the idea :)

:oops: I didn’t want to make any dirty dishes in my clean kitchen, so I used a paper towel instead of a plate – not very environmentally friendly at all!


I’ll regret that later…

I’m going to be hungry this afternoon for shure! I ate lunch at 11:15 because I’m on my way out to class in a minute. I hate lunchtime classes! I had burritos in mind, but I’m not sure that’s what I’d call the end product… I’ll let you decide! I had two small wraps filled with adzuki beans, brown rice and mushrooms. As usual, I heates these a couple of munutes in the frying pan. Not only does this give them a nice warm crispy texture, it also “glues” them shut nicely.

After class I think I’m going to try out my free soup :D I’ve only got a quick break between my next two classes, then a quick supper at school and off to my evening class. I’ll probably only get back to post my supper around 9PM. See you then!

I was walking past the grocery store after my run in the sunshine and look what I got:

A free soup sample! I haven’t tried it yet because I wanted pasta for supper, but I love getting free stuff :D

I made a second attempt at brussels sprouts this afternoon ad a snack. I know, it’s a weird snack but I really wanted to see if I could do better than yesterday. I have to say that they were still bitter. I think I must have gotten a bad batch because I made sure these ones were well cooked! Don’t get me wrong, they were okay, but I couldn’t have eaten any more than I did because the bitterness seemed to accumulate in my mouth. Next time, I will buy them on the day I’m goung to eat them and see if that makes a difference.

On to dinner… I made my favourite go-to meal: spicy sesame noodle stir fry. I actually just threw a whole bunch of veggies in there, not just peppers like I wrote in the recipe. There were carrots, mushrooms and peppers.
