Change of plans

Well, I took pictures all day yesterday with the intention of doing a big evening post, but then I ended up going away overnight and leaving my camera at home!

I threw together a nice vegetarian pasta for lunch yesterday. I stir-fried some broccoli and mushrooms with a bit of ginger and jalapeƱos, cooked some whole wheat pasta and tied it all together with a splash of vegetable broth. To me this is a great summer pasta, nice and fresh tasting.

Later in the afternoon, I cut up a mango that was seriously calling my name from the refrigerator :mrgreen: It was juicy and delicious as usual!

This is where it all falls apart. As I said, I went away overnight at the last minute to take advantage of my last weekend before I start work tomorrow. The trip started with a trip to the local indian restaurant. This was my first experience with real Indian food (ie not cooked by me) and I have to say that I really enjoyed it! I don’t remember exactly what we got, but we started with some samosas, followed by two meat dishes (both of which I can’t remember what they were) served with some basmatti rice and naan. Oh man, this stuff is amazing… I’ve been missing out :mrgreen: I definitely want to try google-ing the restaurant to figure out what I ate so that I can try to re-create it!

This morning, I just had a quick and easy breakfast – peanut butter toast. Okay, I’ll admit it, I slept through breakfast again… this was actually my lunch. I also had a chocolate chip cookie on my way out the door :oops:

Dinner was another stir fry cooked by my boyfriend :D This included ham, green peppers, mushrooms, zucchini, broccoli, tomatoes, carrots and rice. Again, no photo – I was too hungry to go in search of batteries for my camera. I’m not a very good blogger lately, am I? All I can say is that it was super yummy multiplied by a thousand because it was cooked for me!

Tomorrow is my first day of work and I’m a bit nervous because I honestly don’t know what to expect. I am excited too though, so all is good. I will probably have a busy morning though, so I’ll just tell you my breakfast plans tonight: toast and peanut butter with a banana if my mom doesn’t get to it first… I think she packed it in her lunch though, so I may have to settle for another fruit.

Here’s my packed lunch:

A ham sandwich on a large ciabatta bun (on the bottom right), the vegetable fillings to go on the sandwich when it’s time (on the top in the bag) and some carrots. In the veggie bag are tomatoes, pickle slices, cucumber slices and lettuce. Here’s the sandwich from up close:

Pasta? Pizza? Maybe Both!

Another day of study study study! I broke it up today though with a class and a trip to the store, where I bought a larabar for tomorrow. Yes, I went all the way there for a bar to eat between exams! I think the real reason was for a study break though :mrgreen: It was a beautiful day to walk outside too!

Lunch was leftover pasta from the other day. I’m too tired to remember what it was called (from Looneyspoons though), but it was good again as leftovers.

I got a bit hungry during the afternoon (or it may have been exam nibbles… hard to tell) so I had a bowl of yogurt and a kiwi. I found a steak knife that wasn’t packed, so I even managed to cut it!

So, I would really have loved some pizza for supper but that just wasn’t in the plan for today. What did I have instead? A pasta pizza, no recipe again though because it’s from Looneyspoons again. Last one for a while though :P

On a side note, please excuse any typos – especially words with an L – my keyboard is being stubborn. Here’s what heppens when I hit L once llllllll GRRR! I don’t have time for computer problems now!

Oops, I almost forgot the most important part – the last of the soy chocolate PB ice cream!


Lunch

Well, that was an easy exam, but my brain is fried… no clever titles are coming to mind! I either aced it or I missed the hard part :lol: I was so worried beforehand that I feel about 100 pounds lighter now! I even finishes an hour early, leaving me enough time for a morning snack! This was good because I was up early studying, so I was starving! I decided to make a quick stop at the grocery store to grab a bagel from the bulk section and a small jar of natural peanut butter. It’s been a while since I’ve had any, so I was having PB withdrawal :mrgreen:

I then went back to school (good thing I live 5 minutes away by foot!) to my next class, which is the only one where we’re still learning new material. I think we finished up the theoretical part today though, just some problems and examples left!

After my larger morning snack, I was only kind of hungry for lunch. I decided to eat anyway because I could tell that if I didn’t eat a healthy meal, I would be looking for junk food later. That last sentence sounded a bit strange, does this ever happen to anyone else?

Lunch was leftovers from a couple nights ago: Gringo’s Star from the Looneyspoons cookbook. I didn’t really realize just how much was in there until I started eating, but I only managed about half of what’s pictured. I guess that means you’ll be seeing it yet again :D

I think I’m going to spend my afternoon relaxing and then do some studying this evening.


Beans, Take 2

Another food you’ll be seeing a lot of I think – beans! I cooked a whole bag of adzuki beans last week and put half of them in the freezer, so they will continue to make an appearance over the next week or so. This time, I made Orient Express from Looneyspoons (again!) I’ve got another Looneyspoons meal planned for tomorrow night and then I think you’ll get a break :)

I took the photo this afternoon as I was putting it in the fridge, so I caught the bottles (and my lunch in the pot) in the background. It looked cool, so I decided not to take a photo as I was eating tonight. The recipe actually calls for chicken I think, but I subbed in some beans instead. I do eat meat, but I could be happy for a long time without it and I don’t buy it too often. You’ll see a lot more of it though when I’m home with my family for the summer.

Before I headed out to school this afternoon, I had a small mango and a cup of coffee. I usually limit my caffeine intake to the morning (and not even that often) so I might be up all night tonight… eek! What was I thinking?

And back to the books I go :cry:


Wishing for summer

It’s always so hard to focus as the end of the school year nears. Even though this year there’s still plenty of snow on the ground and it really doesn’t look or feel like spring, it sure feels like time to be done with school! I stopped at a sports store that was having a closing sale on the way to school this afternoon and bought two pairs of sneakers! The total was only $50 for one casual pair and one running pair. I won’t be able to wear them running because I really need to wear the perfect shoes for my feet (knee and foot problems) but they’ll be super comfy for walking around town!

Haha, looks like I love pink but they were really the only ones that were kind of nice!

I had a kiwi while making dinner, and I even ate the skin! Here it is on top of one of my cookbooks, can you guess where my dinner came from?

I made Gringo’s Star from, that’s right, Looneyspoons! I got a photo before taking it out of the pan because I was too impatient to serve it nicely :oops: There are a couple more servings though, so you might see a nice piece sometime (then again it might not look great after being nuked…)

Now I think I’ll sit on my bike and watch Harry Potter and the Prisoner of Azkaban! I made a deal with myself that I have to study or bike, but I can only watch TV if I’m biking!
