One of the things I love about the three cookbooks by Janet & Greta Podleski is that all the recipes have such fun names! Tonight I’m eating an Acropolis Sandwich from Looneyspoons:

This is actually supposed to be a Greek-style pita stuffed with chicken, veggies and tzatziki sauce, but I used a tortilla since that’s what I have on hand. I definitely prefer these tortillas warm and toasted, this one was too processed-tasting and doughy (not in the good way!) I hate it when my tortilla gets stuck to the roof or my mouth!
For desert, I cut up an apple and was planning on sprinkling it with cinnamon, but I sat down at my desk and realized that I had left the cinnamon in the kitchen. I was too lazy to go get it, so I ate my apple slices as they were.

Would you beleive that’s just one *small* apple, maybe 2″ diameter? I was amazed that by slicing it thinly it looked like so much more!
Evening snack: cheese quesadilla and mixed fruit with yogurt. Living alone, it’s hard to buy things like bread because I either have to eat a lot of it or it goes bad. I know it freezes, but my shoebox-sized freezer just doesn’t have room in it. Tortillas are no exception, so be prepared to see them fairly often this week!

I made this guy pretty thin, with just enough cheese to stick the two sides together basically! I also put some jalapeños and (of course) BBQ sauce in there. If I had any salsa, I would be in heaven! Unfortunately, I don’t have any and I’m not going to buy any because I’m starting the process of cleaning out my cupboards in preparation for my end-of-school move.
Of course, I was still hungry after eating this, so I decided on some more of my yummy frozen fruit, which I dropped into the bottom of my yogurt container (maybe 1/4 cup of yogurt?) I didn’t take a photo because the tall yogurt container cast too many shadows in my dimly lit kitcken and you couldn’t really tell what was in there. I definitely should have thawed the fruit first – I’m freezing now! On that note, I’m off to warm up in my nice cozy bed, see you in the morning!

Well, I feel like I’m getting things done today. I love feeling productive! As I mentionned this morning, I got groceries this morning. When I got home and chopped up all the veggies that can be prepared in advance. Now I’ll only have to prepare the ones that don’t keep well as I need them. Here’a the grocery list for this week:
- apples and bananas
- spinach, peppers, zucchini, bean sprouts, green onions, mushrooms, a cucumber and a tomato
- two new vegetables to try: brussels sprouts and an acorn squash (which I may have had when I was younger, but I can’t remember if I liked it, so I’ll say it’s new!)
- large tortillas – white whole wheat, which wasn’t what I wanted, but they didn’t have large whole wheat ones
- a snall wedge of low fat gouda
- ehhs
- yogurt
- frozen strawberry-peach-mango mix
- last, but not least, Peanut Butter Granola!
I couldn’t wait, so I had a bowl:

After all that chopping, I wanted an easy lunch so I went for a veggie and cheese quesadilla:

I sautéed some mushrooms, chopped orange pepper and some green onion (cause I have a ton now and want to use it up!) I then spread the vegetable mixture over half a tortilla and added a squirt of barbecue sauce and a sprinkling of cheese. Then I folded it in half and heated it in a dry frying pan until each side was nice and crispy. I don’t know why, but I’m definitely on a quesadilla kick! I hadn’t had one in years, but for the past couple of months I keep wanting them. At least they’re pretty healthy when I make them

Happy Friday!
I decided to treat myself a bit tonight since it’s Friday, so I made quesadillas. Of course this meant a quick trip to the grocery store where I found these:

Would you beleive that I had never tried peeps before today? It’s true! I was watchicg Martha Stewart this morning (I know, I know… but I was bored while I was on the bike!) and she made a craft out of peeps. Now, I’ve never really noticed these marshmallowy treats in the stores before but right after hearing Martha going on about how great they are, how could I miss them? When I saw these sugar-free ones for 40 cents, I just had to see what the big deal was
Well, it’s a good thing they are a seasonal candy because I think I could eat them by the pound!
On to supper… As I mentionned, I made quesadillas. I filled them with mushrooms and light cheese – I went and got wraps but forgot the salsa! Since I dodn’t want to go back out I went for BBQ sauce and it was delicious, if not mexican.

I’ll probably have a snack later which I will tell you about tomorrow, but it may not be first thing since I am going to brunch! I will not be bringing my camera (I’m shy
