Asian inspired quinoa goodness

Oh.My.God. This is amazing! I made Veganomicon’s Pineapple Cashew Quinoa Stir-Fry

I found hidden somewhere in the old posts on Jenna’s blog but I’ll leave you to find it for yourselves since I know it’s copyrighted. Wow, I don’t know what to say! I made quite a few changes, no nuts, no pineapple because I didn’t have any, added black eyed beans and carrots… It didn’t matter, this was still great! The only problem? I only had enough quinoa for one serving, so now I have extra veggies in sauce that I don’t know what to serve them with! I’ll let you know tomorrow what I’ve come up with :mrgreen:

Now I’ll backtrack a bit to my afternoon… I did some schoolwork (boring so I won’t keep going on that subject) I then decided to finish my plyo that I didn’t do this morning but I was getting pretty hungry, so I decided on a bowl of plain yogurt topped with Ezekiel almond cereal. I really like it this way, I’m surprised since my first experience wasn’t exactly mind-blowing.

OOPS!

I forgot my camera :( With all the stuff I had to bring to school this afternoon, I forgot my camera. Here’s a recap:

Supper was Quinoa salad with beans and broccoli. It was just OK – something to fill the gap since I was in a huge hurry today.

Snack a bit later was vanilla yogurt with high fiber cereal and a few crushed peanuts. I usually eat plain yogurt, but I bought vanilla last night during my moment of ice cream-induced weaknes. It was tasty though and maybe I should eat it to satisfy my sweet tooth now and then instead of going on a huge sugar binge!
