A Quick Lunch Post Between Classes

It’ll have to be super quick, I have to leave again in less than 5 minutes! I had a big salad with mixed veggies, topped with a chopped apple and some leftover pork. Apples and pork go so well together! I also made a quick vinaigrette with apple juice, olive oil amd vinegar. The perfect match for this yummy salad :mrgreen:

Lunch and supper all at once!

I’ll start with lunch. I made it an easy one, leftover “ribs” on a whole wheat roll paired with a big salad. In the salad there were plenty of veggies, some low fat cheese and a yummy balsamic vinaigrette. After yesterday’s lack of veggies, it sure felt good to eat a big salad today!

Supper was a bit more labour-intensive: homemade spaghetti and meatballs. Actually I had to make it linguini & meatballs :cry: at the last minute because I only had about 5 strands of spaghetti left in my box (wondering why I would do that?) I was actually really disappointed because spaghetti is one of my favourite foods in the whole wide world :mrgreen:

I used this recipe, except that I baked my meatballs in a 375* oven for about 25 minutes instead of pan frying them. All in all, I really enjoyed my italian feast although I’m still searching for the perfect spaghetti and meatballs! Anyone have a great recipe?

Okay, so it really wasn’t a feast, which is a good thing! I also topped it all off with some parmesan cheese but I almost forgot it. I had already taken photos and started to eat by the time I remembered!


What a day!

Where to start? My brunch was fabulous, although a bit extravagant. We started off drinking café au lait in my friend’s kitchen while everyone arrived and got settled. We then sat down to an amazing assortment of crêpes, fruit, maple syrup, nutella, apple filling, croissants… So many yummy things I’m sure I missed some! Here’s what I ate :

First, a croussant, which I enjoyed slowly with nothing on top. I love to taste the flavour of a well made croissant all by itself.

Next, crêpe #1 – Nutella, blueberries and strawberries. This was followed with crêpe number 2 – apples and maple syrup, then another one filled with nutella and strawberries.

Yes, a lot of crêpes, but each only had a small amount of filling (in my defense!) I then sipped on my glass of wine (maybe 2-3 oz – I don’t really drink, but I wanted to taste) and nibbled on a few grapes.

Needless to say I left there feeling stuffed but happy because I enjoyed good company and good food. I decided this was one of those “worth it” meals :D

When I was finally ready to eat again, I half stuck to my original plan: I made boneless “ribs“. I then paired them with barbecue chips :oops: I unfortunately struggle with an all or nothing attitude and today was leaning toward that for sure! I had intended to make oven fries, but I just couldn’t muster up the energy.
