A good home cooked meal

I am definitely being spoiled lately – my mom cooked tonight :mrgreen: We had a big old fashioned meal of pork chops, rice, corn, carrots and salad. I guess you could say we were celebrating my first day of work!

My first day went well (thanks for the good luck wishes :D ) So far it’s pretty easy, this morning was just paperwork and this afternoon was pretty laid back as well since we had to wait for other people to finish their job so that we could do ours. There’s really not too much to say about work, it’s not that exciting, so I’ll just leave it at that – it went well.

About an hour after supper, I decided that I wanted some desert, so I had a bowl of frozen berries and a bit of yogurt.

I didn’t even bother to thaw the berries – it must be summer! It was pretty warm out today, so I ate them frozen. My family thinks I’m crazy though :P


Vitamin C Anyone?

I think this might turn into a full blown cold – I’ve got the runny nose and sore muscles now :cry:

I’ll spare you the details and get right to the food part… I ate a bunch of times today!

Lunch was a cup of noodle soup, of the store-bought variety. Not the healthiest, but easy and satisfying. I love noodles so this was right up my alley!

Mid afternoon snack was some mango and a pink orange. Looks like grapefruit but tastes like orange – the best of both worlds in my opinion! I thought it would look pretty in a glass:

Supper was HappyHerbivore’s Red Lentil Dal, made with green lentils because that’s what I had. It was yummy served with some rice and a dollop of plain yogurt. I started to eat before I realized that I hadn’t (a) taken a photo or (b) added the yogurt, so the photo’s a bit messy!

Evening snack is a “chickpea cutlet” made with the last of my adzuki beans and some okra. Two comments here… First, I really would have liked to find my potato masher because I couldn’t get the beans mashed with my fork, so the cutlets are a bit crumbly. Second, I’ve never had okra before so I was happy to try something new :D I cut up the cutlet and sautéed it with the okra.

Now I’m going back to the books and will likely need another snack to make it through the rest of my studying – maybe more fruit?


A long and boring day

I have to say that I find that sociology is really boring. I tried to prepare for tomorrow’s exam all day today, but my thoughts keep wandering off into the clouds :lol: I definitely still have a ways to go before I can cal it quits, but I decided to give my head (and hand!) a break and post here.

I ate the last of my BBQ beans for lunch today along with some rice and some baby carrots. I needed entertaining, so I put each thing in a separate bowl… OK, so that didn’t entertain me, but I tried!

While my rice was cooking for lunch, I threw together some supper. I made a sort of Indian-themed pilaf with barley, lentils and red pepper. It was really good, too bad I already forget what I put in there for spices! Here’s what I do remember: cumin, turmeric, coriander, garam masala, chili powder and chicken broth instead of water. I also added some extra water so that the barley would be extra soft and expand even more than usual.

more of the same fruit salad I ate for breakfast! The container was actually full when I started, so I probably ate double what’s in the photo. I’m a bit snack-y right now and still have reading to do, so I think I’l go find some carrots to mindlessly munch on :mrgreen:

Busy Day Ahead!

Today is my last long day at school :mrgreen: First up is my fluid mechanics final exam at 8:30, then a short break followed by my computer science exam at 12:30. This is the second CS exam, I wrote the paper one on Monday and today’s exam is actually on a computer. I’m a bit nervous because it will be graded electronically, which means that one little typo will lose me a lot of points since no one actually reads the programs we write. Did that last sentence even make sense? If not, let’s just say that I’m a bit nervous! After that exam, I have a 30 minute break before I have to meet my partner to discuss our assignment that’s due in another 30 minutes. Hopefully she’s got it all figured out because I don’t even remember how I did my half anymore :oops: After all of that I have a PJ party with a kids group I volunteer with. I have to admit, supper may just be cake :oops: I’ll try to pack some food to take with me, but that’s getting a but scarce around here :mrgreen:

With this busy day in mind, I’m spreading my meals into mini meals today. Each meal isn’t really complete in the sense of having all the food groups but I will try to get them a in at some point throughout the day! Breakfast is the simplest of muesli’s – just oats and yogurt. I didn’t even have a piece of fruit on the side, but you can bet that I’m having some caffeine before my exam!

Snack number two, more of a meal, is leftover cauliflower curry and black rice. It would probably hold me better if there was some protein, but I don’t know what I feel like eating with this so it will be on it’s own.

Other snacks I’m bringing with me to eat as I need them are carrots, peppers and a kiwi


First daily wrap-up

I wish I could say that today was a super productive day, but I can’t. I did get some studying done and I started packing, but I also did a fair amount of procrastination. I have two more exams on Thursday but I just can’t get into study mode. I think my brain has already gone on vacation!

On to the food…

Lunch was leftovers, as usual! “Fried” brown rice with mushrooms and carrots with a side of Hoisin BBQ beans. I guess it was an Asian themed meal :)

My dinner was inspired by HappyHerbivore: cauliflower curry with black rice and a dollop of yogurt. This was a really nice change from my usual flavours! I’m not going to post a recipe because while I half followed a recipe, I also just sort of tasted and added spices as I went along. I’m not really sure that I could remember what I threw in there. It’s basically just cauliflower and spices though.

Later in the evening I had my “desert” – a rice pudding of sorts. I basically cooked some brown rice in vanilla almond milk until it was all nice and creamy. I also added some goji berries, but you can’t really see them. I guess it was really a snack, not a desert since I ate it a couple of hours after supper :lol: I had planned on it for desert though so that’s what I’m calling it!

Finally, an apple. I wanted to slice it up nicely to make it last longer (my fave way to eat apples!) but I already packed up my knives! All my veggies are already chopped up and ready for the week so I thought it would be OK to pack them… I guess I was wrong, but I’m not unpacking them!

That’s it! I have to go un-confuse myself now… somehow I got myself all mixed up in my fluid mechanics notes today :( Sigh… It’s almost over, it’s almost over, it’s almost over….. I can’t wait!
