A busy morning!

I’m glad to report that my post spinning snack filled me up wonderfully! I ended up taking my cheese oat muffins with me and eating one while I did a quick change from bike clothes to weight room clothes. I then headed over for a super quick upper body weight session to really tire me out. As I walked home, I ate the other muffin amd I have to say that I really wasn’t hungry come lunch time!

On a side note, I definitely preferred these muffins with the oats ground into a flour better than whole! It made them much more muffin-like.

As I said, I wasn’t too hungry for lunch, so I had a light salad with spinach, yellow pepper, mushrooms and chicken. This wasn’t really my whole lunch but it was all I wanted at the time, so off I went to do some runnung around that needed to be done. As I was nearing the end of my errands I started to feel hungry and it hit me really quickly so I knew that I needed to eat right away. Luckily, I was near my fave health food store and I stopped in to get a larabar. This time I chose the cinnamon roll one – yum! When I got home, I completed my lunch with a tortilla pizza with lots of veggies.

And I believe that I was still under 500 kcal for my spread put lunch!


A Quick Lunch Post Between Classes

It’ll have to be super quick, I have to leave again in less than 5 minutes! I had a big salad with mixed veggies, topped with a chopped apple and some leftover pork. Apples and pork go so well together! I also made a quick vinaigrette with apple juice, olive oil amd vinegar. The perfect match for this yummy salad :mrgreen:

Lunch and supper all at once!

I’ll start with lunch. I made it an easy one, leftover “ribs” on a whole wheat roll paired with a big salad. In the salad there were plenty of veggies, some low fat cheese and a yummy balsamic vinaigrette. After yesterday’s lack of veggies, it sure felt good to eat a big salad today!

Supper was a bit more labour-intensive: homemade spaghetti and meatballs. Actually I had to make it linguini & meatballs :cry: at the last minute because I only had about 5 strands of spaghetti left in my box (wondering why I would do that?) I was actually really disappointed because spaghetti is one of my favourite foods in the whole wide world :mrgreen:

I used this recipe, except that I baked my meatballs in a 375* oven for about 25 minutes instead of pan frying them. All in all, I really enjoyed my italian feast although I’m still searching for the perfect spaghetti and meatballs! Anyone have a great recipe?

Okay, so it really wasn’t a feast, which is a good thing! I also topped it all off with some parmesan cheese but I almost forgot it. I had already taken photos and started to eat by the time I remembered!


An experimental salad

Well, so far so good – I went to class (ate breakfast during the break around 9:30), went to the computer lab and then I went swimming. I didn’t get as much done as I’d hoped at the computer lab, only one problem! Now I’ll have to go back sometime so I can catch up.

On to lunch: I made a huge salad and had a whole wheat potato bun (Kath’s husbands recipe) with a bean hummus (sorry, no recipe for now since I just threw whatI could find in the food processor!) I titled this post an experiment because of the salad dressing. I was trying to branch out from my usual balsamic dressing so I tried to make an asian one. The final verdict is that it’s missing a few things: some sugar (didn’t have any) and some spice (didn’t think of it in time).
