That’s right, Thursday is the new Friday! Okay, that was lame but you’ll forgive me right? As you can probably guess, Thursday is the last day of my school week (and that means only TWO full weeks left and a 1-day week!) It’s going to be another long day, so here’s a preview:
Breakfast was overnight muesli again, this time with avocado and raisins. I now have no raisins left after last night’s snack attack – what was up with that? Sometimes I wonder about myself… I just crave food, sometimes I don’t even think I care what I’m eating as long as I’m eating. Weird! Anyway, that’s a bit off topic, so back to breakfast…

I’ll be at school all day, so here’s my portable lunch that I’ll probably eat in two stages. Since I have a class right at lunchtime, I would ideally like to eat half before and half after. Usually I eat it all before class and regret it later though!

Carrot sticks(2 medium carrots) green pepper strips(1 small pepper) and a whole wheat roll that I toasted to make crispy bread rounds, all to be dipped in some homemade bean hummus. I’m glad I went rooting through the crisper drawer of my fridge because that pepper was on it’s last legs! I hate to waste good food, so I’m happy I caught it in time.

I was out of chickpeas, so I used pinto beans instead. There’s no real recipe per se, just beans mashed with a bit of tahini, olive oil, S&P, garlic and lemon juice.
I’ll be in class from 8:30 to 10:30, then over to the gym for some weight traininguntil noon or so, then a quick bite to eat and off to computer science lab. After that, I’ll have to make a quick trip home to drop off gym clothes and books and pick up other stuff including my supper, which may or may not be eaten at school, depending on how long class goes. Just in case, here it is:

Leftover “Tinbucktuna” from my freezer stash, before I decided to put it in a plastic container. I’ll try to do a post tonight with anything else I add!

I am definitely having a “hungry day” today! So far I’ve eaten every meal, except breakfast, about an hour earlier than usual. Hmmm… a bit ironic after my breakfast post about not needing a big meal in the morning!
I had a bunch of grapes this afternoon as a snack. I like this picture because I caught the rear wheel of my bike too
Note that I ate way more grapes, that’s just all that would fit in my hand for the photo.

I then attempted to ride my bike outside for the first time this year, but I got about 7 minutes in (ie I got out of my neighbourhood) and realized there’s too much sand on the roads still. There are little mounds of sand all over the shoulders – not safe, so I turned around
I guess I’ll have to try to fit in some training later tonight.
After that little adventure, I was hungry again! I decided I’d better make it a real meal, so I got started on supper: sweet potato wedges and italian tuna melts.

The potatoes just got sliced into rounds and then the rounds into halves to make half-moons. I then sprinkled them with a tiny bit of olive oil and some cajun spices and baked in the same oven for about 10 minutes per side.
Here’s what I did for the Tuna Melts:
- Halve and hollow out a whole wheat roll, leaving about 1/4 inch thickness all around. You can save the insides or just pop them into your mouth as a “while cooking snack” like I did.
- Mix about 1/4 can tuna with 1/4 cup spaghetti sauce. You want this to be pretty thick, so adjust this to your sauce – some are more runny than others! I also chopped up some mushrooms really fine ans stirred them in as well.
- Spoon tuna mixture into the roll “shells” and top with cheese – whatever kind you like but I used low fat cheddar.
- Bake in 400 degree oven for 10 to 15 minutes, until warmed through and cheese melts. Turn oven to broil for the last little bit if you want the cheese to get nice little brown spots.

This really hit the spot tonight because it was a bit of a change from my usual dinners, but I’m not convinced it will keep me full as long. I guess time will tell…
Okay, I have a weird craving for raisins today! I just downed two of these little boxes!

The worst part is that I’ll probably still be hungry in an hour or so because of all the sugar!
Edited again to say that I was right! I had the last of my Ezekiel Almond cereal tonight – a big bowl. I’m stuffed now (I think I was a bit too optimistic in wanting to finish the box) but YAY, a new cereal is coming soon!

The best thing about leftovers? They’re easy! Lunch was leftover tuna & noodles from two days ago. I think I’m on a pasta kick this week – I’m planning on it for supper too. At least my lunch was whole wheat pasta which will keep me feeling full a bit longer. Once again, sorry it’s not very pretty but that’s how leftovers are!

I took advantage of a lazy Sunday morning to head out to the weight room before the afternoon rush. I’m glad I did, it was half empty – just how I like it! There’s nothing worse than having to wait in line for everything at the gym!

As the title suggests, I have a dilema. Here it goes: I have two heart rate monitors, a Timex and aPolar. Simple enough right? Well the Polar died the other day, so today I wore the Timex to spinning today. Here’s the problem: it tells me I had a max HR of 186 and burned 744 calories, when my polar usually gives me a max HR in the 170’s and a calorie burn in the 400’s. This is where I should mention that today’s class was no harder, maybe even a bit easier than usual. So what’s a girl to beleive?
Anyway, on to the rest of my morning…
After breakfast I headed out to the grocery store, here’s what I got:
-3 bananas and 4 avocados (which will take at least 4 days to ripen)
-mushrooms, green pepper, broccoli and carrots
-cream of broccoli soup, 2 cans of tomatoes, small jar of honey
-long grain brown rice, fresh lasagna noodles and meat sauce
-cottage and cheddar cheese, plain yogurt and egg substitute
Nex, I had an oatmeal pancake (sorry for the blurry photo) à la KERF before heading out to the gym :
Finally, after I got home from spinning it was lunchtime! I made “Tinbucktuna” from the cookbook Eat, Shrink and be Merry.
It was delish although a smaller portion than I had hoped for. I can see a snack coming later!
