Another long day

Well, I’ve realized that I’m going to be working much longer hours than I had thought! I managed to leave on time today, but only because I had an appointment to get to – tomorrow I could be there until dark! I’m starting to worry about my biking time now. At least my wallet will be happy I guess because I need to keep this job for the summer (it’s tied into school as a placement)

Tonight’s supper was a chicken stir-fry with veggies (I was too hungry to even see what ones my mom put in!) all wrapped up in a whole wheat tortilla.

It was delicious! I believe my mom made a variation of the recipe Bohemian Wrapsody from Crazy Plates.

I snacked on some strawberries too while I was waiting, but they kept getting popped into my mouth too fast for a photo-op :mrgreen:

While I’m at it, I’ll do a preview of tomorrow since I have to be at work early tomorrow morning. I’m having muesli with some frozen berries (thawed) and avocado if I remember it in the morning. Here it is in my hand, on the way to my fridge:

Later I’ll have a ham and veggie wrap with some carrots and an apple.

Hope you have a good night and I’ll try to make it back for supper tomorrow. I might have to eat on the job though, which means no photos again. I don’t want to break my camera or lose it.

I’m going to be hungry this afternoon for shure! I ate lunch at 11:15 because I’m on my way out to class in a minute. I hate lunchtime classes! I had burritos in mind, but I’m not sure that’s what I’d call the end product… I’ll let you decide! I had two small wraps filled with adzuki beans, brown rice and mushrooms. As usual, I heates these a couple of munutes in the frying pan. Not only does this give them a nice warm crispy texture, it also “glues” them shut nicely.

After class I think I’m going to try out my free soup :D I’ve only got a quick break between my next two classes, then a quick supper at school and off to my evening class. I’ll probably only get back to post my supper around 9PM. See you then!


Double Trouble!

So I picked up some more tortillas the other day because I was enjoying my wrap craze so much. I don’t know what came over me, but I decided to get the small ones. Let me tell you, these bring on some major wrap explosions! Luckily I managed to keep it under control, but it was tough for a while there ;)

My solution? Two wraps, each filled with half a chickpea cutlet and spinach. The first one also had cucumber slices (which I forgot in the second)

The second had cheese (which I forgot in the first).

I guess all together I ended up with all the fillings that I wanted! I heated the rolled up wraps in the frying pan for a couple of minutes so they got a bit crispy on the sides.

It’s still only 7 degrees out, so I don’t know if we’ll make it to the forecasted 14, but it’s still way too gorgeous to stay inside!

Whew! exam #1 done and I think I did well! Here’s a quick recap of my food so far today:

I had a reverse day, so I ate my lunch at breakfast: another “Acropolis Sandwich” with chicken, tomatoes, zucchini, mushrooms and tzatziki, all wrapped up in a white whole wheat tortilla.

After having lunch for breakfast, I had breakfast for lunch, also in the form of a wrap: filled with a scrambled egg, mushrooms, spinach and cheese this time. I’m sensing a theme today of on the go foods!

“Acropolis Sandwich”

One of the things I love about the three cookbooks by Janet & Greta Podleski is that all the recipes have such fun names! Tonight I’m eating an Acropolis Sandwich from Looneyspoons:

This is actually supposed to be a Greek-style pita stuffed with chicken, veggies and tzatziki sauce, but I used a tortilla since that’s what I have on hand. I definitely prefer these tortillas warm and toasted, this one was too processed-tasting and doughy (not in the good way!) I hate it when my tortilla gets stuck to the roof or my mouth!

For desert, I cut up an apple and was planning on sprinkling it with cinnamon, but I sat down at my desk and realized that I had left the cinnamon in the kitchen. I was too lazy to go get it, so I ate my apple slices as they were.

Would you beleive that’s just one *small* apple, maybe 2″ diameter? I was amazed that by slicing it thinly it looked like so much more!

Evening snack: cheese quesadilla and mixed fruit with yogurt. Living alone, it’s hard to buy things like bread because I either have to eat a lot of it or it goes bad. I know it freezes, but my shoebox-sized freezer just doesn’t have room in it. Tortillas are no exception, so be prepared to see them fairly often this week!

I made this guy pretty thin, with just enough cheese to stick the two sides together basically! I also put some jalapeƱos and (of course) BBQ sauce in there. If I had any salsa, I would be in heaven! Unfortunately, I don’t have any and I’m not going to buy any because I’m starting the process of cleaning out my cupboards in preparation for my end-of-school move.

Of course, I was still hungry after eating this, so I decided on some more of my yummy frozen fruit, which I dropped into the bottom of my yogurt container (maybe 1/4 cup of yogurt?) I didn’t take a photo because the tall yogurt container cast too many shadows in my dimly lit kitcken and you couldn’t really tell what was in there. I definitely should have thawed the fruit first – I’m freezing now! On that note, I’m off to warm up in my nice cozy bed, see you in the morning!
